Blueberry Minty Fresh Smoothie/Bowl

It’s no secret that I do love a great tasting and nutrient dense smoothie and I’ve got the one for you that might become your newest fave! This one had my teen requesting over and over again since I had him taste test it a few weeks ago. If you are struggling to get in those important healthy fibres into your little one’s diet, this is a great way to do it! It’s both gluten free and can be made with dairy or non dairy depending on your preference and tolerances. My preference is an anti inflammatory approach so I used almond milk instead of dairy. This one is a perfect breakfast or snack option!

Ingredients (double it for 2-3 people)

  • 1 Cup frozen wild organic blueberries
  • 1 Fresh kiwi (skin removed)
  • 1 Cup almond milk (or any dairy or non dairy as you prefer)
  • 1 Tablespoon nut butter (I used almond butter)
  • 1/2 Cup fresh mint leaves. Topping options: Cacao nibs, chia seeds, pumpkin seeds, nuts, nut butters, coconut flake, etc.
  1. Add the ingredients to a blender, pour into glass to drink as a smoothie and top with cacao nibs or,
  2. Pour into a bowl and add your toppings options such as cacao nibs, pumpkin seeds, coconut flakes, chia seeds, etc.
