Easy Honey Garlic Chicken Breast

I’m always on the hunt for easy yet healthy chicken breast recipes. For myself, I have chosen an anti inflammatory lifestyle for my neurological condition and this one tastes great and is not time intensive to make. Here is the recipe if you would like to try:

  • about 1lb or pre cut or cut up boneless and skinless chicken breast
  • 2 1/2 TBSP Olive Oil
  • 3 garlic cloves minced
  • 1 1/2 TBSP Apple Cider Vinegar
  • 1 TBSP Soy Sauce (I use gluten free reduced sodium one)
  • 1/3 Cup Honey (or maple syrup can be substituted)
  • Salt and Pepper

1. Use cut up chicken breasts, horizontally sliced, sprinkle with salt and pepper

2. Make the marinade and mix olive oil, minced garlic cloves, soy sauce and honey in a mixing bowl and stir in the chicken breast, mix well

3. On a parchment lined baking sheet pour the marinated chicken breast and excess sauce and can cut up any vegetable to bake along side it, I choose mini potatoes and cauliflower and sprinkled some oil oil and dried spices on top.

4. Place in oven for 25-35 minutes at 400 degree F or until internal temperature of 165 degree F, can check with thermometer

5. For a low carb option, serve on top of any greens, I choose spinach leaves below and can use any dressing like an olive oil and red wine vinegar mix. Easy, light and nutrient dense meal that is lean and nourishing to the mind and body!
